Power Chef and Co-owner Demetrio "Big Dog" Zavala runs pizza operations at Coal Mine Pizza in Boca Raton, Florida. His use of the Neapolitan coal oven produces many of South Florida's best pizza pies. In the style of New York's Pizza dynasties (Lombardy's 1906, John's of Bleeker Street 1926, and Totonno's 1924) Chef "Big Dog's" pies are thin, crispy, and crunchy, charred to perfection and served pioing hot from the near 1000 degree Fahrenheit inferno. The high temperature allows quick cooking leaving our sauce and cheese in perfect condition, no "orange oils" dripping from the pizza like ordinary pizza. Coal from the mountains of Pennsylvania produces the heat for the crunch and uinque charcoal flavor of the thin and crispy crust. MANGIA BENE!!
